Right now much of the country is dealing with plunging temperatures. Eating a nice, warm bowl of soup is warming from the inside out. As a kid nothing comforted me more than a bowl of homemade chicken noodle soup. It made me feel better when I was sick and the smell . . . ah, the smell.
Here are some soup recipes that are guaranteed to chase the chill away.
Homemade Chicken Noodle Soup from Spiced Blog. The appeal of this recipe is the ‘shortcut’ of using a rotisserie chicken. The recipe also includes the option of making your own stock or using store bought. Bottom line you can have a nice pot of chicken noodle soup that your family will love in less than an hour.
If you want to take it up a notch. Try Spiced Blog’s Fiesta Chicken Tortilla Soup. With picante sauce, green chiles and chili powder and crispy tortilla strips, this is a party in a bowl.
Another soup classic is tomato. Kimversations’ recipe for Homemade Cream of Tomato Soup is ready in about 30 minutes. Can’t get any easier than that.
Pull out your crock pot for this minestrone from Skinny Taste. Chock full of herbs, vegetables, beans and pasta this soup is super (or should I say soup-er) satisfying. Perfect for those chilly days when you’ve got lots of errands to run. Start this early in the day, let it simmer in the crock pot all day. An hour before serving add the final ingredients and you’re good to go.
Manhattan Clam Chowder is on this list because it’s more like soup than chowder (to me, anyway). When I think of chowder a soup that’s thick and creamy comes to mind. Manhattan-style chowder has a tomato base and is absolutely delicious. This recipe from Art of Natural Living uses fresh tomatoes, but you can substitute canned, and is ready in about half an hour.
