Right now much of the country is dealing with plunging temperatures. Eating a nice, warm bowl of soup is warming from the inside out. As a kid nothing comforted me more than a bowl of homemade chicken noodle soup. It made me feel better when I was sick and the smell . . . ah, the smell.

Pull out your crock pot for this minestrone from Skinny Taste. Chock full of herbs, vegetables, beans and pasta this soup is super (or should I say soup-er) satisfying. Perfect for those chilly days when you’ve got lots of errands to run. Start this early in the day, let it simmer in the crock pot all day. An hour before serving add the final ingredients and you’re good to go.

Manhattan Clam Chowder is on this list because it’s more like soup than chowder (to me, anyway). When I think of chowder a soup that’s thick and creamy comes to mind.     I can’t wait to try the crockpot minestone! I love soups in the fall and I love the time a good crockpot meal gives me to do other things instead of standing at the stove all day. Always excited for a new crockpot recipe.
