Nothing is better than shoving the most obnoxious cheese fries, pizza, wings and dips of all sorts in your mouth. Chased by a nice glass of Cabernet. OK, maybe a Corona. Whatever your choice of chaser is, it’s time for some Football.
Since this was the first football Sunday, I had chili brewing in my crock pot all day long. Plus the dreary, rainy day added much more Fall comfort in my home. Warming up with all that goodness in every bite and then screaming at the game, eating some more, scream more. . . you get the picture.
Also rolling around in the back of my head was a fantastic recipe a fellow Food Blogger posted for quick and easy pizza dough. It’s a must do when you are making pizza at home. It was so fast and easy. Thank you so much for making my life a hell of a lot easier. Waiting for dough to rise is worse than sticking a fork in your neck.
I couldn’t wait to get my hands on that dough and make something. And then it hit me: Buffalo Chicken Pizza and Pretzel Bites with a Chili Dipping Sauce. YES! That was it. We had all the essentials of the first Football Sunday menu. I used Chili for two out of my three dishes and had left over chicken from a meal the night before. Perfect foods for adults and kids. My kids loved the little pretzel bites. They can also help cut the dough up in a little bites. Bonus!
Here’s everything you will need and instructions on how to make your Football Sunday delicious!
Buffalo Chicken Pizza
2 chicken breasts, cooked and cut into cubes
1 – 8 ounce fresh mozzarella ball cut into cubes
3 slices pancetta, tear into small pieces
2 garlic cloves minced
1/4 cup olive oil
Fresh basil leaves, chiffonade
1 cup hot sauce, 1 cup (We like it spicy!)
salt and pepper to taste
Instructions: Preheat oven at 400 degrees. Roll out your dough in a rectangle and place on a greased cookie sheet. Be sure to poke the dough with a fork so it doesn’t bubble up. In a bowl mix the chicken and hot sauce together. Mix the olive oil with minced garlic and brush on pizza dough, make sure you get around the edges so it turns golden brown. Spread the fresh mozzarella over the dough. Then the buffalo chicken, pancetta, salt and pepper to taste. Pop in the over for about 20-25 minutes. Add more hot sauce over the pizza and top with fresh basil. YUM!
To Make the Pretzel Bites:
First you need to make the pizza dough for the pretzel bites. Click here for the recipe. Divide into 3 ounce portions of dough. Roll between your hands, or on floured counter top, until you’ve got about a 12-inch long rope of dough. Cut 1 inch pieces and place on a greased cookie sheet.
Repeat until all the dough is used. Brush with olive oil and top with salt. Pop in the oven for 15 minutes until golden brown. Serve with a side of chili with Monterey Jack Cheese on top.
