White Bean Chicken Chili

- 2 Boneless/Skinless Chicken Breast Cooked and Shredded
- 2 Cans White Beans
- 1 28 oz. Canned Diced Tomatoes
- 2 Carrots Diced
- 2 Celery Stalks Diced
- 1 Onion Medium Diced
- 1 Garlic Clove Minced
- ½ Jalapeno Seeded and Diced
- 1 Avocado Sliced
- 3 Cups Brown Rice
- 1 32oz. Chicken Stock
- 4 Cups of Water
- 2 tbsp. Italian Seasonings
- 1 tsp. Red Pepper Flakes
- 3 tbsp. Olive Oil
- Salt and Pepper to Taste
- In a large pan heat Olive Oil of medium heat
- Toss in Carrots, Onions and Garlic
- Salt and Pepper
- Add Red Pepper Flakes
- Cook for 5 minutes to soften veggies
- Add in Beans
- Toss in Jalapeno
- Add all the seasonings
- Add Chicken Stock and Water
- Stir and simmer for 30 minutes
- Check Your Seasonings!
- Add Shredded Chicken
- Cook for additional 10 minutes
- Serve over Brown Rice
- Slice Avocado on top
